Fourteen healthy volunteers were given 160 grams of potato chips daily for a week (one-half of a large bag). Acrylamide increases the production of reactive oxygen species in human monocytes (WBC’s) which decreases the cellular glutathione in the body (master anti-oxidant). Otherwise, potato chips can induce a pro-inflammatory state.
